Tomorrow is the first day of Spring. I had this dream before I woke up and I saw the most bluest sky ever. Everything was so bright and colourful and warm. Reality hit when I woke up to dull gray. I wanted to stay in bed because there was nothing to signify spring was around the corner. Besides the fact I had work to do and I had to haul my butt out of bed, I'm glad I did.
I printed out a coupon for a buy one get one free Dairy Queen blizzard treat. The gray sky is slowly becoming a blue sky with white fluffy clouds. The day is looking up. Now, I just found this in my email from my favourite online magazine, Prevention.com.
Healthy recipes that are light and refreshing and perfect for spring. How's this for a teaser?
Maple-Rum Strawberries with Vanilla Frozen Yogurt
Servings: 6
1 1/2lb strawberries, sliced (4 c)
1 Tbsp + 1 tsp pure maple syrup
1 Tbsp + 1 tsp light rum or 2 tsp rum extract
1/4tsp freshly ground black pepper
1pt low-fat vanilla frozen yogurt
6 fresh mint sprigs (optional)
Place strawberries in medium bowl. Add maple syrup, rum, and pepper. Toss gently to mix. Put a scoop of frozen yogurt in each of 6 decorative goblets. Top each with strawberries and garnish with mint (if using).

This recipe is right up my alley! We go to the local orchard here in May when they have pick your own strawberries day...love strawberries!
