Dandelion Greens - A Healthy Alternative

I remember when I took my munchkin out for a walk. I agree, bright yellow is an attractive colour. It reminds me of the sun and its warmth. Obviously my munchkin felt the same way and would pick dandelions like it was going out of style. With her arm fully outstretched and with a huge smile on her face, she presented me with the most bountiful bouquet of dandelions and buttercups.

We'd take them home and fill an egg cup with water. Was she trying to tell me something? The reason she picked them so close to the flower wasn't suppose to be put in water and displayed on the dining room table, but to eat them for dinner? Ok, you can't eat buttercups, but you can eat dandelions.

These days you don't have to go to far to find dandelions. They are plentiful and everywhere, but the key here is to pick the leaves before the flower buds. The flowers can be eaten in salads or used to make wine.

Dandelion is effective in:

- Promotiing urination
- Anemia
- Treats gastrointestinal disorders
- Treats skin disorders like eczema
- Regulating diabetes
- Treats breast and lung tumors

Dandelion leaves are rich in iron, calcium, minerals and vitamins A, C, D, K, and B2. It's also helpful in lowering cholesterol, and premenstrual bloating because it can be used as a diuretic. When consumed, the dandelion roots contains choline that stimulates digestion and can help in detoxification.

Love them! Eat them! GROW them! My neighbors think I am crazy to grow dandelions but leaves are eatable (good in salads), flowers are good to make jam and roots ate great medicine - why not to grow Dandelions!?
